How it all began
Last year, before the clock struck midnight and while standing in a ballroom VERY, VERY pregnant I closed my eyes and made my New Years Resolution. In that moment, without knowing, Simply Sweet was born. ( Shout out to Samantha Radandt of B&R Events for hosting the event that lead us here today. )
The clock struck midnight and the crowd went wild. The lovers kissed, the dancers danced and the excitement of a brand new year took over us all. We were already expecting a wonderful 2018 because our first child was on his way in late February but just three weeks and and we're welcoming William "Wyatt" Merckle 28 days early.
Blessed with a brand new baby and dealing with one serious dose of post-partum, I embarked on my:

My "self-taught' journey started with a simply vanilla cupcake and buttercream icing that ended in tears. Not only did I burn the cupcakes, royally, but I iced them about 20 minutes to soon with my already runny, melted, "soupy" "buttercream" icing. Needless to say they went straight in the trash. I could have chosen to quit right there. I could have thrown in the towel and allowed this AWFUL start to my retirement plan discourage me but it only fed my hunger for success.
Three weeks later, nearly 100 hours of online culinary classes, roughly 30 sticks of butter and countless pounds of powdered sugar/granulated sugar and I had it. Finally, a dozen vanilla buttercream cupcakes that didn't see the trash but saw the inside of a plastic container and a price tag and it's been full steam ahead ever since.
Just like our child, Simply Sweet Bakery Boutique LLC was officially established with the state on August 20, 2018; almost 9 months to the date of conception. It goes without saying that we wouldn't be where we are today without the love and support of our customers so from me, Kyle and Wyatt...THANK YOU.
