Unicorn MANIA

Today we took on our first PIN"spiration" order; fondant white cake unicorn cupcakes. To start this order off we had to find the most PERFECT unicorn sprinkles and of course we landed on this "Flight of the Unicorn Sprinkle Twinkle Medley" on Etsy. We went straight from Etsy to Amazon in search of gold, lace liners and gold, luster dust found here. After we were done ordering all of our supplies it was off to the kitchen.
It's always smart to start with your fondant. I finished all of my fondant work the night before delivery. This allows your fondant pieces to have time to set in the fridge or freezer before assembly. If you don't chill your pieces first then you run the risk of your horns and ears not standing up right; and who's ever seen a crooked horned unicorn? I used a medium size heart shaped cookie cutter to make the ears. To get the ear shape, simply hold the heart cutouts upside down and fold the left heart hump over the right and voila. Finish them off with a dash of pink food coloring in the center. Next, pinch off a piece of fondant and roll it out evenly, to about 5in in length, and bring the end pieces to meet. Now, simply twist the the fondant three or four times and pinch softly at the tip to finish off the horn. Lay each horn flat on a cookie pan, lined with parchment paper and place a tooth pick into the center of the base. This will provide stability for your cupcakes when you start to assemble the unicorns.
Once you've got your cooled cupcakes, buttercream icing and chilled fondant pieces all done it's time to assemble the troops. To ice I used a 1M open star tip and a 16oz piping bag. While your icing is still soft add your sprinkles and ears then throw the cupcakes in the fridge for about 15 minutes. This will allow your icing to harden enough to take on the weight of your horn. Add the horn in the center of the cupcakes and brush on your gold, luster dust then throw them back in the fridge to finish forming. And there we have it, Unicorn Cupcakes!
